Healthy Summer Grilling Recipes You’ll Love
I recently teamed up with Charlotte Parent for Fit Family Challenge to give you healthy summer grilling recipes you’ll love! I gave the scoop to participates on one of our family favorite weekly and healthy meals, grilled salmon!
Fish can be expensive, but if you belong to a shoppers club like Costco you can get great quality fish at great prices. We simply thaw out pieces the night before and do the prep work 10 minutes before grill time. Dinner is ready in less than 25 minutes.
If you’re avoiding dairy you can simply modify the recipe by eliminating the Marzetti’s Lite Slaw Dressing and adding spicy mustard.
Grilled Salmon
Serves: 4-6 People
Easy
Grilling time: 7-10 minutes
Ingredients
- 2 lbs salmon filet
- ½ cup Marzetti’s Lite Slaw Dressing
- ¼ cup of Grey Poupon Mustard
- ½ teaspoon pepper
- ½ teaspoon dill
- ½ teaspoon dry or fresh rosemary
- 1 teaspoon dry or fresh parsley
- ½ teaspoon dry or fresh oregano
- ½ teaspoon of dry or fresh basil
Wash filet in cold water. Pat dry. Check for occasional bones in filet.
Mix slaw dressing and spices in a small bowl. Then spread mix over the top of the filet. (the skin goes on the bottom). Put fish directly on outdoor grill which has been lightly oiled with Olive Oil or Pam Spray.
Cook over a medium fire for 7-10 minutes until fish begins to flake.Do not turn. Skin should peel off easily when filet is removed from grill.
Serve with rosemary new potatoes, grilled asparagus, or fresh corn and bell pepper medley as shown.
Fresh Corn and Bell Pepper Medley
Ingredients
- 4 fresh corn on the cob
- 3 mixed colored bell peppers (red, green, orange and or yellow)
- 2 tablespoons fresh chopped parsley
- 1/2Â teaspoon dry or fresh oregano
- 1 tablespoon fresh basil, chopped
- 1Â teaspoon pepper
- Dash sea salt
- 1-2 teaspoons olive oil
Remove the corn off the cobb with a knife and place in a pan. Dice bell peppers and add to the pan. Pour 1-2 teaspoons of olive oil, add fresh chopped parsley and basil, pepper, and a dash of sea salt. Sauté on medium heat for 10 minutes or until desired taste.
Get fit and eating healthy should be a family activity! Get your entire family involved when making dinner, I know my girls enjoy not only making grilled salmon together as a family but eating it!
