Since Easter is this week and we’ve been talking easy Easter décor, dessert, and party inspiration I thought I would be the perfect time to share the recipe for Bird Nest Cookies!
I’ve enjoyed making these sweet treats ever since this Cherry Blossom and Birds Themed First Birthday Party, almost 5 years ago!
There are several Bird Nest recipes, but I prefer the coconut macaroon recipe, which is lighter and easy to make!
Bird Nest Cookies -15 minutes plus cooling
Ingredients
- 1 Pkg. (14 0z) coconut flakes (Baker’s Angel Flake Coconut Sweetened is was we used)
- 2/3 Cup sugar
- 6 Tablespoons flour
- 1/4 Teaspoon salt
- 4 Egg whites
- 1 Teaspoon vanilla
- 1 Pkg. Easter Peanut M&M’s or Peanut Butter M&M’s Eggs
Directions
- Preheat oven at 325 degrees.
- Mix coconut, sugar, flour and salt in large bowl.
- Stir in egg whites and vanilla until well blended.
- Drop by spoonful onto greased and floured cookie sheets.
5.Bake at 325 degrees for 16 minutes or until edges of cookies are golden brown. I prefer softer cookies, but if you want a harder cookie leave in for an additional 2-4 minutes.
6. Immediately remove from cookie sheets and place on cookie racks to cool. Makes about 2 dozen.
7. Place 3 M&M’s in the center of each nest. Finish decorating the nests and serve.
If you want a richer taste following the direction on Peanut Butter M&M’s Eggs bag or just add chocolate or nutella to the center and finish decorating the nests.
*Note you can make these easy cookies 3 days ahead of time and store in an upright container.
These were perfect for my daughter’s Easter party at school! When a recipe is this easy and delicious, you might as well treat yourself and serve it up for your Easter celebration!
